Dining Rooms

A cruise ship may have a number of dining rooms. The Norwegian Wind has three main dining rooms and several other specialty restaurants. They have a Sports Bar and Grill where they have a very nice buffet available, a pizzeria, a coffee bar, and often a barbecue on the deck. There is also Le Bistro, a very fancy optional dining room for elegant dining.

I sat down with Errol Grant, the Matre'd of the dining rooms.

Drango: "Thank you for meeting with me Errol."

Errol: "I'm always glad to meet with you Drango. Are you getting enough to eat?"

Drango: "I certainly am. Could you tell me about the dining rooms."

Drango: "One thing that always confuses me is all the silverware at my place. What is it all for?"

Errol: Its all very simple Drango. Let me show you."

Always work toward the center as the meal progresses.

Errol: "Yes we do Drango. We get fresh flowers at ports. We usually get six boxes of flowers so we can have flowers in all our dining rooms. Here is something interesting Drango. This is the music system for the dining room."

Drango:
"How do you fold those neat napkins?"

Errol: "Here let me show you. We always like to have the table look special."

Drango: "Errol, how did you get to be a Matre'd?"

dining-114.jpg (12931 bytes) Errol: "Well Drango, I'm originally from Costa Rica. I came here in 1982 as a Bus Boy. Over the years I worked my way up to Matre'd."

Drango: "Do most get to be Matre'd that way?"

Errol: "Definitely. As we say everything goes by your performance. If you perform right, can do the job well, and you are qualified."


Drango: "If someone were interested in getting a job in a dining room on a cruise ship, what would they do?"

Errol: "If they have experience or training they can apply at the corporate offices. NCL's is in Miami."

Errol: "Bye Drango. Next time you come back bring your friends."

One of the very special things is the Gala Midnight Buffet. This is always a favorite of the passengers!
